RESUMO

Aqueous enzymatic extraction (AEE) of macauba pulp oil (MPO) was performed in this study with five commercial enzymatic pools. The chemical, nutritional, and thermal properties of the oils with high oil efficiency by AEE were evaluated and compared with mechanical pressing (MP) and organic solvent extraction (SE). Among the AEE processes, the pectinase pool (at pH 5.5 and 50 °C) exhibited the highest process efficiency (88.6 %). The oils presented low acidity values (0.4-3.1 %) and low molar absorptivities, indicating minimal oil degradation. Bioactive compounds, such as carotenoids, were found in MPO. The iodine index and the fatty acid profile of the oils revealed a high content of unsaturated fatty acids, particularly oleic and linoleic acids, with excellent nutritional scores, as evidenced by anti-atherogenicity and anti-thrombogenicity indices. These findings emphasized that AEE is an eco-friendly approach for extracting high-quality MPO with beneficial health compounds for food products.

Thermal analysis could rapidly and easily predict nutritional value of ruminant feeds. The hypothesis is that crambe meal (CM) has a quality similar to that of soybean meal (SM), and the objective of this study was to determine the nutritional characteristics of CM and compare them to those of SM. CM had greater concentrations of phytic acid (26.3 vs. 16.0 g/kg) and phenol compounds (615 vs. 393 mg gallic acid (GAE)/kg) than SM. In vitro dry matter (DM) digestibility was lower for CM than SM (752 vs. 975 g/kg DM). Cumulative in vitro gas production at 48 h of incubation (14.1 vs. 19.4 mL/100 mg substrate DM), and energy release (4.5 vs. 5.7 kJ/g substrate DM) were lower for CM than SM. CM had a higher concentration of low digestible fiber, hence degradability of DM was lower and the proportion of indigestible fraction was greater for CM than SM. High concentrations of indigestible compounds were likely responsible for lower gas production of CM compared to SM. These results suggest CM quality is lower than that of SM and that thermal analysis is a useful tool to precisely determine the nutritive value of oilseed residues.

ABSTRACT This study aimed to determine if the quality of macauba pulp oil is affected by drying the whole fruits at 60 ºC. Mature fruits were collected at every five days on the ground under 10 palm trees. A mixed batch of 3 kg of whole fruits, with three replications each, was dried in an oven with air circulation for 0, 12, 24, 36 and 48 h at 60 ºC. After every drying time, dried fruits were pulped using an automated device, followed by oil extraction with hexane. Moisture and oil content were determined in the pulp, and the pulp oil quality was analyzed for fatty acid composition, free fatty acids content, peroxide value, molar absorptivity at 232 and 270 nm, refractive index, and total carotene content. The tested temperature was sufficient to decrease moisture to a range suitable for automated pulping, with the best combination and easier pulping being reached after 24 h of drying. In the first 12 h there was an apparent synthesis of unsaturated fatty acids and carotenes. The tested temperature was insufficient to avoid the enhancement of acidity since the beginning and throughout the drying period, nor the degradation of polyunsaturated fatty acids. Thus, it is concluded that drying of fresh fruits of macauba palm at 60 ºC is not appropriate to obtain an overall good quality pulp oil for industrial purposes.
